Emma Watson is definitely looking to be an actress--it's her ambition. And Daniel Radcliffe has been working the theater angle since the third film; he wants to be an actor. I don't know about "Ron" (don't even know his name, probably not a sign he'll continue with acting).
But, it's not as if they were in their 30s or 40s when they were cast and weren't actors. They were kids, so it's natural to assume they weren't actors. But, now they've been acting for what...10 years? Longer? Not only have they gotten the taste of it and been successfull, but they weren't subjected to the weirdness that other kids actors have to deal with: getting grown up roles after kid roles. They got to grow up in the role. So, it'll be relatively easy for Emma Watson, at the least, to transition.
And every actor has to deal with that one big role being the thing everyone knows them as at one point or another. Johnny Depp = Jack Sparrow, Colin Firth = Mr. Darcy, Christina Ricci = Wednesday. Eventually they either expand their roles enough to leave it behind, or learn to live with it. Heck, some, like Mr. Depp, embrace it and get a tattoo. XD
